I had a chat with some of my inner circle of people at the beginning of the year and I realized that I have lost a lot of my inspiration over the last two years. The things that I once took joy in became fickle or put aside because I was told they didn’t matter. Well, that’s not true actually. Do The Daniel does mean a lot to me – and I’m ready to restart #DanielsDish in a whole new way as the first step towards finding myself again.

Roasted Vegetable Soup ??
Ingredients:
1 head is cauliflower
5-6 of your favourite type of tomato
2-3 garlic cloves minced
1 white onion minced
1 large container of @CampbellCanada broth
Olive oil to taste
Feta cheese to taste
2 tbsp @clubhousecanada Garlic Salt
2 tbsp Onion Power
Chop and mince all vegetables, placing onto a roasting pan, drizzle with olive oil lightly, and bake at 350 degrees for 20-25 minutes. Next turn broil on high for approximately 5-7 minutes (keeping your eye on this to avoid burning the vegetables.
Once browned nicely, carefully remove and cool. Add warm vegetables and broth in batches to your @VitamixCA, blender at home, or you can use a hand mixer too. Be very careful when blending hot food because of the steam.
Add blended soup to a soup pot, add in seasoning, and simmer on low heat for at least an hour. The longer the better in my opinion!
Serve hot to your guests, garnishing with a drizzle more oil and feta cheese.
This soup is the perfect comfort food for cold winter days or when you need to focus on taking care of your mental and physical health.
