Stepping Up My Summer BBQ Game

Anyone else find themselves sitting the sun smiling and feeling a certain sense of relief? Maybe it’s just me, but the world feels lighter and brighter these days. Amid the realities we are all living, there is something to be said about the simple pleasures in life. From delicious wine to laughs on the phone, urban gardening on my rooftop patio to BBQ season and taking full advantage of new recipes, I am really vibrating on a whole other frequency these days. In hopes i can help you have a certain sense of bliss as well, I thought I’d share a few recipes I was recently introduce to that are gonna completely change your summer BBQ game too.

For those of you who follow along with me on Instagram, you’ll have seen that I recently attended a (virtual) BBQ event with the incredibly talented (and handsome) Chef Dev thanks to Cobs Bread. The two powerhouses have joined forces this summer to help us all enjoy delicious and refreshing recipes – and trust me when I say if they are anything like the one I got to try, you need to get cooking with us ASAP.

From a Grilled Vegetable Burger to a Grilled Lemon Pepper Chicken Sandwich, a Brown Butter Lobster Roll to the Grilled Halloumi & Watermelon Sandwich which I made, these flavours are incredible together and in my opinion are some of the easiest and most delicious recipes I’ve tried in a long time!

Chef Tip: Pat the watermelon dry prior to oiling for better grilling results.

Time: 15 Minutes

Serves: 2

Ingredients:
Grilled Halloumi and Watermelon Sandwich
8 oz Halloumi Cheese, sliced into ½ slices
4x ½” Watermelon, slices
4 tsp Grapeseed Oil
1 tsp Kosher Salt, to taste
1 tsp Freshly Cracked Black Pepper, to taste
1 tsp Unsalted Butter, for toasting bun
2 x COBS Gourmet Hamburger Buns

Basil Pesto
1 ½ cup Basil Leaves, packed
2x Garlic cloves
2 tbsp Pine Nuts
1/3 cup Parmesan Cheese, grated
1/3 cup Olive Oil
1 tbsp Lemon Juice
½ tsp Kosher Salt, to taste
½ tsp Fresh Ground Black Pepper, to taste

Directions:
For the Grilled Halloumi and Watermelon Sandwich:

  1. Preheat BBQ to high heat.
  2. Brush halloumi and watermelon with grapeseed oil and season with salt
    and pepper.
  3. Sear until golden brown on both sides, approximately 2-3 minutes.
    For the Basil Pesto:
  4. Combine all ingredients except olive oil in a food processor or blender and
    pulse until ingredients are incorporated.
  5. Then slowly drizzle in olive oil to emulsify. Beware not to blend too long to
    avoid heating the pesto.
    For Serving:
  6. Lightly butter and carefully toast COBS Gourmet Hamburger Buns on the
    BBQ until golden brown.
  7. Brush both sides of buns with pesto.
  8. On the bottom bun, place halloumi slices and top with watermelon slices,
    then place top bun. Serve warm.
