Food & Drink | Not one, but TWO Avocados from Mexico recipes to wow your CFL Grey Cup guests!

As we count down the days to the CFL Grey Cup, it’s time to realize that you don’t need to settle for bad food. I have been working tirelessly with some of my favourite foods to create recipes and reasons to not settle this year. Along with Avocados from Mexico, Catherine & I have created two delicious recipes to wow your friends and family as you celebrate #GameNightGuacNight & the #GreyCup! Come see what we created and why sweet AND savoury are the way to go.

You’ll remember that we have been sharing some of our favourite #avosmexico recipes over the past few years (like this one) and that some fun facts about Avocados from Mexico (the world’s leading producer of avocados) include:

  • 90 per cent of avocados consumed in Canada come from Mexico.
  • 55,000 tons of avocados shipped from Mexico to Canada every year.

When it comes to game night, obviously choices are important so that friends and family have the opportunity to relax over a delicious meal. Don’t worry, we did too!

Mango Madness Guacamole
Adding a sweet note to a traditional guacamole will help to take your #GreyCup guests on a one way trip to flavour town!

Ingredients
  1. 3 ripe Avocados from Mexico, mashed
  2. 1/ 2 fresh lime, juice of
  3. 1 ripe red mango, diced
  4. 1/2 teaspoon salt
Instructions
  1. In a large bowl mash avocados
  2. Stir in diced mango
  3. Add juice from 1/2 fresh lime
  4. Stir in salt to taste
  5. If preparing in advance, place 1-2 pits from avocados in the bowl to avoid browning
  6. Serve with blue corn chips

Maple Glazed Bacon Guacamole
This is a game changer - pardon the pun. The addition of crunch bacon bits and sweet maple syrup take this classic appetizer to a whole new level. Serve with Mango Madness Guacamole for a sweet & savoury combo that will wow your friends and family!

Ingredients
  1. 3 ripe Avocados from Mexico, mashed
  2. 1/ 2 fresh lemon, juice of
  3. 5-6 ounces bacon, diced
  4. 2 tablespoons maple syrup
  5. 1/2 teaspoon salt
  6. 1/4 teaspoon black pepper
  7. 1/2 teaspoon dried chili peppers
Instructions
  1. Over medium to high heat, add bacon and maple syrup
  2. Stir regularly to avoid maple syrup burning
  3. Crisp to golden brown and remove from heat
  4. Drain bacon and set aside
  5. In a large bowl combine avocados, lemon juice, bacon and seasonings
  6. If preparing ahead of time, place 1-2 avocado pits in the bowl and cover in fridge
  7. Serve with red corn chips

 As a practicing Holistic Nutritionist and actual health expert, Catherine offers some great facts about Avocados below. 

Avocados are the new kale. Everyone posts about how much they love them. Or about how hard it is to find that small window of ripeness, but how sweet and photo-worthy it is once they do! As a nutritionist, I am a next-level avocado lover. If I could eat them everyday, I would. They are hands down one of my “desert island” foods. Alongside being insanely delicious, they are chock full of a ton of nutrients. What they are most commonly known for is the healthy fats held within these lovely green gems. They contain a special kind of fat called monounsaturated fat, which acts as an anti-inflammatory, specifically on the cardiovascular system. Avocados are also filled with potassium, vitamin K, vitamin E, fiber, vitamin C and magnesium! In this amazing plant food you will also find all B vitamins except vitamin B12. This is all really great news for your nervous system, your brain, your skin and your liver (to name a few)! Let’s just say that eating an avocado ain’t a bad idea. It also helps that they taste like little nuggets from heaven. Yes, that’s a technical nutrition term.
